Golden Veg Soup

This is based on the soup in Hairy Dieters but with a few changes to suit my tastes

Serves 4

1 small butternut squash
1 carrot
2 Medium parsnips
1 large or 2 small  sweet potatoes
1 onion
2 garlic cloves
2 tsp sunflower oil
1 veg or chicken stock cube
Black Pepper
Low fat natural yogurt
1 Litre of just boiled water

Peel, de -seed( where needed) and chop veg into approx 3 cm chunks. Chop Onion and garlic roughly.

Heat oil and fry onion and garlic until soft and lightly coloured. Add the veg and pour over the boiling water. Crumble over the stock cube and bring to the boil.

Turn down the heat slightly and simmer for 25-30 minutes or until the veggies are completely tender.

Blitz with a hand held blender or allow it to cool a bit and blend it in a food processor. Add black pepper to taste and serve with a little natural yogurt.
